With the vault being made of thick stainless steel, it allows the oven to reach the high temperatures needed to perfect your cook in short time and with minimal fuel.
It is probably worth mentioning the cooking surface contains 3cm thick refractory material required for that slow and delicate release of the heat as per tradition.
For the oven to hold its high teperatures for long periods of time, Fontana use ceramic fibre and natural rock wool for the insulation of the oven.
